Happy Friday Friends!
Last week Michelle and I enjoyed one of the best raw lasagna we have made to date. And we have made a few like our
- nut free winter inspired lasagna
- summer basil lime lasagna
- sunflower cheez cucumber zucchini lasagna
All these have been delicious but this one really hit the spot for us!
It was full of flavor.
It was bold in color.
It is gluten-free, vegan, and raw.
It is full of vitamins and minerals.
It was fun to make and eat.
It was perfect!
If you are looking for a simple summer dinner than this dish is for you. One of the best things about raw lasagna is that they are really super easy to make. It may not look like it but promise it is! We decided to make a pesto for one of the layers. First we thought about putting in spinach but we had arugula on hand so we used that instead. And I am sure glad we did. I loved the spice that arugula provided this pesto!
Arugula Pumpkin Seed Pesto Sauerkraut Lasagna
- 1 zucchini, large (thinly sliced)
- 1 large tomato (thinly sliced)
- And pumpkin arugula pesto (recipe below)
- as much sauerkraut as you want
Pumpkin Arugula Pesto:
- about 1 cup fresh arugula
- 1/3 cup pumpkin seeds (can use sunflower seeds or any nut)
- 2 garlic cloves (optional)
- 1/4 tsp salt (or to taste)
- 2 tbsp tahini
- 3 tbsp sauerkraut juice (can use lemon or lime juice or apple cider vinegar)
- handful of fresh basil
- 2-3 tbsp nutritional yeast
Place all pesto ingredients in your blender and blend till creamy. *may do it in a food processor as well.
Than you build your lasagna with your zucchini and tomato as layers. To get your zucchini really thin it is best to use a mandoline.
Take a few pieces of zucchini and place on plate.
Next tomato slice.
And top it off with pesto and sauerkraut.
Repeat layers!
That is it.

Pretty simple! We love our raw lasagna! We always feel so good when we are all done eating! But the sad part was when it was all gone.

that looks absolutely amazing! i never really liked traditional lasagna and since i found out that i have celiac disease haven’t even missed it. you’ve given me something to miss with this haha! i love all the flavors in this as well! saw your comment about the whole30 but girls…you CAN do anything you put your mind to! even if it was just for 7 days as a challenge, know that you have support in your quest for a healthy lifestyle! x

And we never was a fan of real cooked lasagna, even when we ate the typical SAD, but something about raw lasagna, it is sooo different. Simple, refreshing, and does not make you feel heavy, haha
I’ve been meaning to try a raw lasagna and this one combines numerous summer favorites of mine: heirloom tomatoes, fresh basil pesto, and of course, SAUERKRAUT. This recipe is definitely next up on my “to make” list.

I am so intrigued by this recipe! I adore sauerkraut and I bet it tastes great in a raw lasagna. I also love my mandoline slicer, it makes slicing/grating so easy and the results always come out so pretty n’ perfect. Happy Friday ladies

This looks fabulous, I have had an abundance of zucchinis lately and my spiralizer has been super busy. I never thought to convert the zucchini into sheets (lasagne). Will have to psych myself up to use my mandoline – I have a healthy respect for the sharpness of that beast
Sadly, although I live in Germany (the land of sauerkraut), I can’t eat it, it just doesn’t agree with me. What could I substitute instead, any sugggestions?
Mandy so sad to hear that sauerkraut does not agree with you, have no fear though we got a few ideas for substitutions for you: salsa, guacamole, any veggies (cooked or raw), maybe making a cashew nut spread (one of our favs is blending up a pepper with some cashews and add in spices with lemon juice). Or you could just omit the kraut. Hope this helps! xoxo
thanks for the suggestions, guac is always my go-to, I could eat it every day. Cashew nut spread sounds yummy and I think that will definitely be worth a try. Michaela – nothing special to our kraut for this one, just red cabbage. Sometimes we do play around with garlic in it. And then we also make fermented veggies – like beets, carrots, kale, radish

Raw lasagna is a dish I’ve made that even very skeptical omnivores have enjoyed. For some reason, zucchini really doesn’t work for me (I’ve tried it so many ways, so many times, and I just don’t like it, even when everyone else does). But I might try this with jicama! (I’m at my course and won’t get to fix anything for a couple weeks but after that…)
